The restaurants we love are those that follow a chef's love of food: high quality, unprocessed, fresh ingredients, prepared simply but with great care to bring out the untarnished essence of each, in harmony with one another for a meal of balanced flavor, texture and appearance.
To that end we will use only the finest ingredients in the preparation of our pizza, ciabatta sandwiches and salads. Real Prosciutto di Parma from Italy, from Wisconsin we get fresh Fior de Latte Mozzarella from Grande. Dried Turkish Apricots for our signature Crust salad, Molinari sausages from San Francisco, Maytag Bleu Cheese from California, crushed San Marzano tomatoes for our fresh and oven-roasted pizza sauces and only fresh hand-torn basil.
The Wine
To complement our food, a carefully selected list of over 35 primarily American wines, all priced aggressively to encourage experimenting, sampling and sharing, and all available by either the bottle, the 6 ounce glass or in a symphony of three 2 ounce samples of a "build your own wine flight". |
